Season your meat like a chef

White meat, red meat, ground meat: whatever the menu, seasoning is important. Likewise, we must remember to choose condiments and spices according to the cooking method. Here are some simple tips for successfully seasoning your meat.​

Enhance the strength and character of red meat  

The seasoning of the meat must take into account the type of dish. Seasoning meat also means preparing it while it is still raw. Seasoning before cooking is therefore recommended. If you prefer seasoning at the end of cooking, there is nothing better, for example, than fleur de sel for red meat. It will enhance its flavor when tasted. For uncut meats such as beef ribs or turkey, the ideal is to use aromatics that are preferably incorporated into the cooking juices or sauce. We can mention thyme, savory, mustard seeds or marjoram.
One will take care of a certain balance between the dishes and the spices, from where the interest to choose mixtures ready to use as the big salts or the  flowers of salt flavoured with spices : pepper, pili-pili, clove, pink berries, etc

Enhancing the sweetness of a piece of pork

Unlike red meat, this white meat has a less pronounced taste. It is therefore necessary to be careful about its seasoning. In general, aromatic herbs such as basil, rosemary and thyme are chosen. However, it can be perfectly seasoned with salt with 13 spices, including curry.
Ideally, the meat should be lightly blotted with a paper towel as it is being browned. This will prevent the seasoning from burning at the bottom of the pot. Finally, white meat dishes should be simmered over low heat. The spices will do the rest, bringing out all the desired flavors and scents. We will think, among others, of the ground white pepper or the pink berries for their sweetness.

Season the ground meat for a unique taste

In the kitchen, you are the artist. The result depends on the inspiration when preparing the sauce or marinade. In the case of ground meat, onions are essential. However, a pinch of Pili Pili can be added to a few spoonfuls of olive oil.
Black pepper is also excellent. But here, it is better to take it ground, rather than crushed. Its taste is unique and well known. That said, we can opt for green pepper, which we will add at the last minute. Less violent in the mouth than the previous one, it will bring the right amount of fantasy to the dish. Another possibility is to mix the spices with a whole egg beaten in omelette. This can be incorporated into the ground meat before preparing the meatballs or steaks.
