The Mango Spice Crisp is very similar to a crumble with a crunchier texture. The crumble is sandier on the inside and crunchy on the outside. Its preparation is very simple.​

The ingredients 

For 800 grams of mangoes, you will need the following ingredients:

  • a dash of lemon juice
  • 2 tablespoons of the honey of your choice
  • 4 teaspoons of powdered spices: cinnamon, combava, ginger, vanilla
  • 50 grams of brown sugar
  • 60 grams of slivered almonds
  • 50 grams of oatmeal
  • 40 grams of almond powder
  • 50 grams of melted butter
  • A pinch of fine salt
  • 2 tablespoons of plain yogurt
  • 20 cl of cold liquid cream

Preparation of the mango spice crisp

First, whip up the 20 cl of cream in an iced bowl and let it rest for 20 minutes in the freezer. We add gradually the brown sugar. To obtain a good consistency, one will take care to beat the cream slowly then quickly. As soon as done, we place the whole in the cool. Once finished, we preheat the oven to 180 °C. Next, fry the almonds in a dry pan until they are golden brown. Then, we put them aside. Sprinkle the mango slices or cubes with lemon juice. They will thus keep their color without blackening. For the rest of the cooking, we recommend to use a non-stick pan to heat a knob of butter and to brown the mangoes and the honey.

Let simmer over medium heat. The mangoes should not be completely cooked. The mixture must be smooth: neither too thick nor too liquid. We readjust the spices and the honey according to the flavor which we wish. As soon as done, we move on to the preparation of the gratin dish. The mangoes are placed in an even manner.
The rest of the ingredients will be mixed in a large bowl: oatmeal, almond powder, flaked almonds, salt and yogurt. Then add the melted butter. Spread the crumbled mixture by hand evenly over the mango pan, without pressing it down too much.
Bake for 20 to 30 minutes. Preferably until bubbles form around the dish and the spicy mango crumble is golden brown.
