Ingredients:

  • 300g brown sugar
  • 350g of flour
  • 1 teaspoon of baking soda (if you don't have any, it's okay)
  • 1 teaspoon of baking powder

  • 1/2 teaspoon of salt
  • 1 large egg
  • Seeds from 1/4 vanilla bean
  • 200g of dark or milk chocolate
  • ​ flake salt
  • 4 teaspoons of cinnamon powder

Preparation:

In a bowl, mix the flour, baking soda, baking powder and salt.

Once melted, pour the butter into another bowl and add the sugars. Add the egg, mix until smooth and shiny, then add the vanilla. Gradually pour the dry mixture into the bowl.

Cut the dark chocolate into pieces and add to the mixture. Cover the bowl with cling film and place in the refrigerator for 30 minutes. 

Preheat oven to 180°C. Using an ice cream scoop or a tablespoon, form balls of dough and place them on a baking sheet covered with parchment paper. Space the cookies well apart so they don't mix. Sprinkle dough balls with fleur de sel. Bake for 10 minutes. After 8 minutes of baking, open the oven, take the tray and tap it on the work surface. This will allow the cookies and chocolate to spread well.  

Turn the cookies over. Repeat the operation twice. Once baked, place cookies on a wire rack and let stand for at least 10 minutes before eating.
