Spices of Madagascar

A land of authentic flavors, Madagascar tells of its contrasts and fragrances through its daily life, whether it is a vegetable garden, a walk in the forest, the colorful alleys of local markets or the traditional cuisine of grandmothers.

The spices of the Big Island guide our adventurous steps to the meeting of men and cultures. From their ancestral know-how, from pepper trees as far as the eye can see, preserved in the natural sanctuary of production. Ilanga Nature is particularly concerned with the preservation of these lands. Therefore, we work with small local producers to favor a fair and reasoned agriculture. We have brought back these treasures from the most beautiful spice gardens of the Red Island. Whether it is the simple seeds, berries, roots or the bark of plants. Spices have told the story before their use in our kitchens. In small jars full of dreams, sun and new flavors, Ilanga Nature signs a whole line of fine and divine spices.

The Peppers of a Thousand Colors

Pepper is a rare spice so appreciated for its ability to awaken all the senses. It comes in various colors (green, white and black) depending on the maturity of the berries. The green pepper berry is harvested when it is still green, the black pepper berry is harvested when it is half ripe and the white pepper is obtained by processing the berries detached from the pepper tree when they are very ripe and dried. Whatever its color, it offers to the gourmets a strong and rather pungent flavor.

 Discovery Spices

Our spices have been carefully harvested by hand and have retained their flavors, aromas and all their properties. Combava, cinnamon, coriander, turmeric, clove... the most beautiful scents are to be discovered in the company of other condiments characteristic of the islands. 

 







Flavored Salts

Salt, since we need it every day, we might as well choose the best... or the best for the fine cooks. Our large salts and flowers of salt are natural or cleverly associated with the tastiest spices of Madagascar.

The ILANGA NATURE salt collection recalls the fertile and exotic land where these precious crystals were harvested. Salts of character, delicately extracted from their marine case in the salt mines of Morondava in the Middle West of the island or in the salt mines of the North in Antsiranana. This white gold is born from the delicate evaporation by the sun and the wind, then it is delicately harvested by the salt worker. The ancestral know-how of its picking preserves the purity of these nectars.  

 


Natural and Pure Spices

Salts that taste the long summer days in the great infinite spaces of Madagascar meet the power of the earth in incomparable blends. Spicing up dishes is not easy when you lack spices. At Ilanga Nature, we prepare your large salts and fleur de sel to meet the need for both taste and fragrance. The best spices of this great wild island, from the mildest to the strongest, mixed with fleur de sel or grey salt give them a very special color and scent.

If elsewhere, the essential oil of spices is extracted, we wanted you to enjoy the whole spice: garlic, anise, cardamom, coriander, cumin, turmeric, fenugreek, clove, mustard, nutmeg, pili pili. Thus, each pinch will contribute to perfume your preparations. The dosage is very well thought out. You will have the necessary quantity to perfume your dishes and raise their taste by adding the good quality of salt. A single product can contain 5 to 13 spices as is the case with the 13 spices coarse salt.
